who are we?
Azuma, Japanese for “East,” has a double meaning. The East, as a nod to Japan, the region on which Azuma Amsterdam bases its cuisine, but also a reference to the East of the Netherlands, where our chefs Mees Temminck and Yordi Floors started their careers. Mees and Yordi learned the trade together at the (among aficionados often known) restaurant Moskou, after which they moved to the kitchen of Amsterdam’s most popular Asian restaurant. Here they were able to put their love of Oriental cuisine into daily practice. Azuma Amsterdam embraces Eastern cuisine with a nod to French cuisine. Unique. Azuma Amsterdam consists of two private chefs who have a passion for Asian cuisine and only work with the very best products.

At Azuma Amsterdam, the product always comes first. We only work with products we stand behind 100% ourselves. If the daily supply of fresh fish is disappointing, we will switch gears to ensure that what we serve is 100% Azuma Amsterdam. Our dishes are Japanese/Asian with a small touch of French.

Chu Toro refers to medium-fat tuna. It is located just under the skin and in the back of the tuna’s belly. Chu Toro is the perfect balance between the lean Maguro Akami and the softer Maguro O Toro. This elegant piece of tuna is perfect for sashimi and sushi, let us surprise you.
what is blue fin?
We like to work with the bluefin tuna. The bluefin tuna is one of the largest and also best known species of true tuna. The bluefin tuna is found in both the northern and southern parts of the Atlantic Ocean. In the Mediterranean Sea, the bluefin tuna is also found, where its main spawning area is located. The bluefin tuna is the most prestigious fish for sale, this delicacy is in line with caviar and truffle as far as we are concerned.

Arctic salmon or Icelandic salmon is a particularly pure, flavorful and sustainable salmon. This farmed salmon is the closest thing to wild Atlantic salmon. The fish have room to swim in the very spacious cages in the fast-flowing, fresh, nutritious ocean water.
